Step 1: Prep the Pecans

Arrange the pecans into small clusters (3–4 pecans each) on a parchment-lined baking sheet. Leave enough space between clusters for easy assembly.
Step 2: Melt the Caramel
In a microwave-safe bowl, add the caramel candies and 1–2 tablespoons of heavy cream (or water) to help with melting.
Microwave in 20–30 second intervals, stirring after each interval, until the caramel is smooth and pourable. Avoid overheating to prevent burning.
Carefully spoon about 1 teaspoon of melted caramel onto the center of each pecan cluster, ensuring the caramel holds the pecans together. Let the caramel cool and set for about 10 minutes.
Step 3: Melt the Chocolate
In a separate microwave-safe bowl, melt the chocolate (milk, dark, or white) in 20–30 second intervals, stirring in between to ensure a smooth consistency.
If the chocolate feels too thick, add ½ teaspoon of coconut oil or butter to thin it out.
Step 4: Assemble the Turtles
Spoon a generous amount of melted chocolate over the caramel-coated pecan clusters, covering them completely or leaving some caramel exposed—your choice!
