Wet Ingredients

  • 2 large eggs
  • or flax eggs for a vegan option
  • 1/3 cup melted coconut oil or unsalted butter
  • adds richness and helps with texture
  • 1/2 teaspoon vanilla extract
  • adds warmth and depth of flavor

Sweetener

  • 1/2 cup erythritol or stevia blend
  • choose your preferred sugar substitute for baking; adjust to taste
  • Tip: For a more natural option you can also use monk fruit sweetener. Make sure it’s a baking blend that measures like sugar.

Optional Add-ins

  • 1/4 cup sugar free chocolate chips
  • adds bursts of melted chocolate without extra sugar
  • 1/4 cup chopped walnuts or pecans
  • for added crunch and healthy fats

Instructions
 

Step 1: Preheat the Oven

  • Set your oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper to prevent sticking.

Step 2: Mix the Dry Ingredients

  • In a large mixing bowl, combine:
  • 1/2 cup almond flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • Stir until everything is evenly mixed and lump-free.

Step 3: Add the Wet Ingredients

  • Crack the eggs into the bowl and add:
  • 1/3 cup melted coconut oil (or butter)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup erythritol or stevia blend
  • Use a whisk or spatula to mix until the batter is smooth and fully combined. It will be thick and fudgy—this is what you want.

Step 4: Add Optional Ingredients

  • If using, gently fold in:
  • 1/4 cup sugar free chocolate chips
  • 1/4 cup chopped nuts
  • These extras make the brownies more flavorful and textured, without adding sugar.

Step 5: Bake

  • Pour the batter into your prepared pan. Spread it out evenly using a spatula. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).
